Josefa Cocina de Lena


Since 2019, Josefa Cocina de Leña has been known for its rustic, cozy, subtle and elegant atmosphere. Its name comes from the memory of Josefa Yagues Ames, the owner's mother. Josefa was a person who always wanted the well-being of her family and loved ones. The restaurant honors her memory by cooking some of his recipes and sharing its space with others.

In addition to being a weekend restaurant specializing in fine wood-fired cuisine with Mexican fusion, Josefa hosts events organized by its owners, the Guerrero-Méndez family. From weddings to baptisms and birthdays, each event has its own special touch. The family ranch offers space for the most unique entertaining desires you can think of. The restaurant's modern yet rustic farmhouse style is the perfect setting for any occasion, featuring nature-inspired decor. Located along the main road of Playas de Rosarito, it’s 19.5 kilometers from the San Diego-Tijuana border.

Once Pueblos

Once Pueblos, is a region of Michoacán known as "the eleven towns" it stands out for its exquisite gastronomy always surrounded by women who were born to be chefs. Their cuisine is aimed at the gastronomic diffusion of the region and the elegance of Mexico itself.

Influenced by the food of Michoacán, their menu celebrates the variety of Baja ingredients, adapting to the different seasons of the year, always offering surprises on the menu.

Born in Michoacán, their chef, always passionate about her culinary roots, shapes her kitchen with ingredients grown in their orchard, with dishes that change according to the weather.

She graduated from Culinary Arts School with a Master's Degree in Mexican Cuisine, she began her career in the city of Guadalajara, Jalisco, later and since 2013, she began her own project as Chef and owner of the Mexican cuisine restaurant "La Mestiza" in the city of Tijuana.

In addition to running her own business, she participates in the television program Cuarto para las Cuatro with a cooking capsule where her goal is to continue spreading the word about traditional Mexican cuisine.

Cuatro Quattros:

The mission at Tahona is to educate and give reverence to the complexity and beauty of the Mexican culture through its most iconic beverage, mezcal and to become an epicenter of mezcal culture in the San Diego & Baja California region.

At their locations, you can enjoy amazing cocktails, have incredible Oaxacan inspired food and taste some of the best mezcals out there. Their team has selected over 120 kinds of mezcals and our tasting experiences are meant to be fun and educational.

Tahona Baja is located north of Ensenada, inside Cuatro Cuatros, the Premier Ocean Front residential and tourist Master Planned Community with Vineyards and Sea in the Americas.

Nestled in the middle of the vineyards, Tahona Baja features an agave field with the mezcal tasting room perched on a wooden ship.

Dining is served alfresco inside the agave arena and under two ancient Oak trees.

Their menu features Baja classics like the famed Ensanada fish taco & the Tijuana born Caesar salad as well as an Oaxacan touch with their Mole flight and their four Mole duck tasting plate.

Their selection of fresh seafood, gourmet tacos and their other revisited classics will transport you throughout several Mexican regions. It is the perfect complement to their incredible selection of artisanal produced mezcales.
